NO BAKE CAKE..........A TWIST IN CARROT HALWA




gajjar halwa is one of the best dessert in winter for Indians. All over the country it is made in different way but the interest, feel of having Gajjar Halwa is same every where, Indians love it like anything. Every place have its different recipes.but in winter it is special menu in get  togethers ,parties .picnic.but here i make some thing different using carrot halwa. .i had saw cake with rasgulla on masterchief -1 i decided to make it with gajjar halwa.The   idea came to my mind to twist it to make innovative recipe. This is my first trial but comes out super.this is no bake cake with the combination of three things.
1-carrot halwa  
2-pumkin halwa
3mini gulab jamun









CARROT HALWA-

prep time--15 minutes
cooking time=--30 minutes
ingredients
red carrots- ikg
sugar-150 gm
khoya-200gm+20 gm for decoration
ghee-1tbsp
dry  fruits-cashew nut ,almond,raisins-1/2 cup
green caradom powder 1/4 tsp
Method:
Peel carrot and grate it. Heat ghee in a pan add carrot and cover it. Stir in between.When carrot is tender and water is evaported, add sugar. After adding, it will leave water and will require to be dried on maximum heat for about 5 to 10 minutes.When dried, add khoya ghee and dry fruits cook for 5 more  minutes. it is more dry than normal halwa.




Pumpkin Halwa

prep time 10 minutes
cooking time-15 minutes
pumpkin--250 gm grated
sugar -3tsp
khoya-50gm
ghee-1tsp




Method

heat the grated pumpkin and dry its water. it will take 5-7 minutes 
Add sugar and cook till water dry.
Add khoya and fry for 2-3 minutes
Buy mini gulabjamun from market.here i used kalajam which i make at home recipe is here
Decoration 
for top of the cake fry kohya for 3-4 minutes. when cool add powder sugar to it.,




Now assemble the cake.

Take half of the gajjar halwa on the dish make the round shape or any shape u like
Now spread the pumpkin halwa on it.
Cut gulbjamun into 2 pieces
Arrange them on the pumpkin halwa layer.





now put another half of carrot halwa on top . with hands make it round .

Decorate with khoya sugar mixture.
Garnish with any dry fruit




Set it in the fridge for 30 miutes,

Seve hot........Heat in microwave after cutting into pieces.

Pudina [MINT] rice

Pudina (Mint) Rice


Prep time---5 minutes
cooking time 10 minutes
Ingredients:
Rice - 1 cup boiled
Spring Onions - 2 chopped
Cumin seeds - 1 tsp
Oil - 1 tbsp
Pudina (Mint) - 1/2 bunch
Garlic - 2 flakes
Green chillies - 1

Method:

Grind pudina, garlic and green chillies and keep it aside.
Heat oil in a pan and add cumin seeds. When it crackles, add spring onion and fry till transparent. Add pundina paste and rice and mix well. Cover with lid for 2 - 3 minutes.


Grow mint in your garden. Quite easy. After removing mint leaves, place mint sticks till approx 2-3 cms deep in a pot filled with soil. It takes 1 - 2 weeks for mint to grow. Pluck mint leaves whenever required. It will grow again in the pot. It is organic, free from pesticide and tastes definitely better than the ones bought from the shop.

Dates-Walnut Eggless Cake in 15 minutes















Cooking time: 15 minutes

Ingredients
Dates: 1 cup
Walnut: 3/4cup
Baking soda: 1 teaspoon
Baking powder: 1/2 teaspoon
Milk: 1 cup
Maida: 1/2 cup
Sugar: 1/2 cup
Oil/Butter: 1/4 cup
Kaju (Optional)


Method
Grind dates and walnuts coarsly. Mix them in hot milk. In a seperate dish, add maida with baking soda, baking powder, oil and sugar. Add milk along with dates and walnuts in the dish, mix well and place the dish in microwave oven and bake for six minutes. And it is ready to eat...Yummy !!!

SARSON KA SAG ,MAKKE KI ROTI (PUNJAB SPECIAL)

Mention Punjab and the first image that comes to mind is  GOLDEN TEMPLE&that of lush green fields. Mention Punjabi food and the first thing that comes to mind is makke ki roti and sarson ka saag. Punjabi cuisine is like the Punjabis themselves. It is simple, sizeable and hearty - with no unnecessary frills.
. Besides the long preparation time, these vitamin rich dishes also require a lot of time to cook. Almost all the preparations are cooked on a slow fire to coax out that perfectly robust taste. Sarson ka saag is cooked on a slow fire for hours with a minimum of spices so that the fresh taste can be retained. In fact, the longer it takes to cook the saag, the better it tastes.
IMPORTANCE OF SARSO DA SAG AND MAKKIDI ROTI

The festival of Lohri was celebrated on 13th Jan. The Festival of Lohri marks the beginning of the end of winter and the coming of spring and the new year

In the evening, with the setting of the sun, huge bonfires are lit in the harvested fields and in the front yards of houses and people gather around the rising flames, circle around (parikrama) the bonfire and throw puffed rice, popcorn and other munchies into the fire, shouting "Aadar aye dilather jaye" (May honor come and poverty vanish!), and sing popular folk songs.


The traditional Lohri food Sarson da Saag and Makki di Roti is specially cooked for the main course on this day along with sweets and other delicacies. I learnt this mouthwatering duo -the Punjabi way from my aunt. for dinner coz it tastes better if the Roti and Saag are both piping hot. So here’s a typical Punjabi recipe (aunt's) for Sarson da Saag and Makki di roti



For the Sarson Saag
1 big bunch Sarson leaves (mustard leaves)
1 bunch Spinach leaves½ bunch Bathua leaves (Chenopodium album)
1/4 bunch of green methi(optonal) 
2 onions chopped
2 tomatoes chopped
green chillies    5 crushed
4-5 garlic pods finely chopped
½ inch ginger piece crushed
2tsp Makki flour (Cornmeal)
Salt to taste




Method:
Roughly chop the cleaned, washed leaves of Sarson, Spinach (don’t remove spinach stalks) and Bathua. Pressure cook for 1 hour. Cool and coarsely puree in a food processor.
Add makki ka atta green chillies and paste of ginger to this sag. Add salt.Cook for 10-15 minutes .
In a pan heat 1 tsp butter and oil. Add ,chopped garlic   and onion .Sauté till onions become translucent. Add chopped  tomato to it and cook till butter comes out .Add sag to itand cook for 5 minutes.
It is ready to eat.Serve piping hot with makki di roti


MAKKE DI ROTI:

2 cups Makki Flour (cornmeal)
Lukewarm water
Salt to taste
Oil for cooking
Butter for topping
balls. Pat each ball into a small round Roti between your palms, or make rotis by patting on a flat surface or on a plastic sheet taking care that the Roti is not too thin.Cook on a hoAdd salt to the Makki flour. Knead into a dough by adding warm water. Divide into small t griddle brushing oil on both sides.
Top up with butter and serve with sag.

Corn Vada(makki ka atta)......Winter Sepcial




It is different  simple and  with less ingredients. In winter we like fried and hot snacks .and the winter of Delhi temperature is  very low. Being punjabi we used makki ka atta in different recipes .Besides sarso ka sag and makki ki roti we use it in the pratha of methi ,cauliflower,raddish. this recipe is my innovation When we were in Raebarli there is get-togethers and party and we have to make different type of snacks to show our clavier.so make new ideas and this recipe is also the invention of that idea. it is like vada but not required prior preparation  &less ingredients ..






Preparation time----5 minutes
cooking time-4-5 minutes



Ingredients
Makki ka atta(cornmeal flour)-1cup
boiled potato-1mashed
onion-1 finely chopped
green chili-1
red chili =-1/4 tsp
coriander leaves-finely chopped
seasamseeds-1tsp(optional)
wheat rawa--1tbsp
ajewan or thyam seeds--1/8 tsp(optional)
salt to taste






oil for fry
Method
take a bowl and mix all the ingredients . add one tsp oil to into it.



Mix well it is not like a smooth dough but hard. and little scattered.
Take 2 tbsp dough and bind it as we do in laddoo.
Flatten this ball on palms like vada .make all the vadas



Heat oil in a pan and fry on slow fire.It will not take much time bec batter is hard.


Enjoy hot makki ka vada with sauce or  green chutney in winter  with cup of tea......

PAV BHAJI

Nehru loved children very much so He was called “CHACHA NEHRU" By every child & country's people. Nehru gave very good thoughts for India's people. """ IT WAS THE NEHRU'S DREAM THAT EVERY CHILD SHOULD EDUCATED not only EDUCATED THOUGH THE WELL EDUCATED our INDIA.
On grace of this occasion, i am posting one of the favourite's dish of children...Pav Bhaji  holiday special for all the kids


Ingredients:--
potatoes-1/2 kg
gobhi carrot, beans-200gm
tomatoes-250gm [puree]
pav bhaji masala--3tsp
onion-2choped
ginger garlic paste-1tbsp
butter or oil--75gm
coriander leaves
garam masala-1/2 tsp

Boil 4 large potatoes, 1/2 cup peas & 1/2 cup chopped carrots. On a flat pan heat  75 gm  butter/ghee/oil and fry 2 chopped onions. Add 2 chopped tomatoes or puree, 3 tsp of Pav bhaji masala and salt to taste. Add mashed potatoes, boiled vegetables and stir. Add Garam masala for taste. Add little water and mix well.



Slit buns, apply butter on the inner side and roast.



Serve hot together Pav and Bhaji ,garnish with Corrainder leaves. U can enjoy this with Pudhina Chutney !!
