Cracked Wheat(dalia) with mix veg Baked upma

It is the dish i tried yesterday. before yesterday i made cracked wheat idli and some batter left out. I know no body will eat again.So i thought to make utpam.but this new idea came to mind ki bake it.i mix rawa and oats to this batter and some veggies.It really comes out superb.It is easy and quick to make.


Ingredients:
cracked wheat-1 1/2 cup
urd dal-1/2 cup
oats-2tbsp
rawa-4tbsp
mix veggies(carrot onion peas coriander leaves cabbage)chopped finely
curry patta
mustered seeds-1/2 tsp
baking powder 1tbsp
oil for tempering


Method:
soak dal for 3-4 hours. Grind it and mix cracked wheat, rawa, oats and salt.Leave overnight for fermentation.
Heat oil in a pan and put mustered seeds and curry patta when crackled switch off the gas.
Add all veggies and this tempering to the batter.add baking powder so that it is light. u can ignore it if batter is fully fermented.

Grease the baking tray and pour the batter to it.Bake for 6-7 minutes in microwave.
We can steamed it but by baking its taste is different.
Eat with coconut and green chutney.Best for breakfast.

Masaledar Arabi (Colocasia)

This dish i prepared carefully as some time it never comes out perfect.now i saw my daughter used corn flour which make the arvi crispy and  not stick to another this is really very useful and now i make it oftenly bec it is easy to make. i make it in two types witout onion only used dry masala .but here i make with onion ginger garlic. its taste is good   u can try it

Ingredients:
Arabi: 1/2 kg
Cornflour: 2 tbsp
Ginger-garlic paste: 1 tsp
Tomato puree: 1/2 cup
Green chilies: 2-3
Coriander powder: 1 tbsp
Red chilli powder: 1/2 tsp
Turmeric powder: 1/2 tsp
Garam masala: 1/2 tsp
Cooking oil: 4 tbsp
Salt: To taste
Coriander leaves for garnishing
Method:
Boil arbi in pressure cooker for only 2 whistles. Peel the skin after it cools down.
Now press arbi one by one in the palm using a cloth.
Coat arbi with cornflour.
Take 2 tbsp oil in non stick flat pan and shallow fry on slow fire till it becomes crisp.
Pour oil in a cooking pan and add onions and ginger-garlic paste and fry till it becomes brown. Add coriander powder, turmeric powder, tomato puree and chilli powder and fry till it leaves oil.
Now add arabi with 1/2 cup water to mix it with masala and add salt. Cook till water is absorbed.
Add garam masala and mix.
Garnish with coriander and serve with hot chapatis or parathas or naan.


Tips:
1. Mix coriander powder, turmeric powder and chilli powder in a small quantity of water 5 minutes before adding to the pan. This leaves fresh masala taste and does not get burned.

2. This curry can be made with gravy by adding 1/2 cup of water more.

DUM ALOO



Ingredients
baby potatoes--250gm
onion-3
ginger garlic-1tbsp
tomatoes -2pureed
turmeric powder-1tsp
coriander powder-1tbsp
red chili powder-1/2tsp
kasoori methi-1tsp
gram masala 1/2 tsp
khoya-2tbsp
curd-2tbsp
salt to taste
oil-for fry

Method:
Pressure cook potatoes for one whistle only and leave.when pressure release peel the potatoes boiled bec small potatoes can not peel raw easily.After peeling fry it.leave aside.
Heat oil in a pan add onion fry till transparent add ginger garlic paste fry another 5 minutes.Add tomatoes puree and fried till oil comes out.Add all the spices except gram masala.add curd and khoya fry for 2 minutes.Add potatoes and kasoori methi.Add three cups of water and cover till aloo done .add gram masla and garnish with coriander leaves.
Eat with chapati or puri.

BREAD UPPMA


There is an old bread in the fridge i think it is not use for sandwiches so the best use of old bread is to make uppma.here is the simple recipe with little different ingredients.
Ingredients:
bread pieces-6 cut into small pieces
potatoes-2small boiled
peas-1/2 cup boiled
onion-2 finely chopped
tomatoes-4 finely chopped or pureed
coriander leaves-1bunch
green chili-2
garam masala 1/2 tsp
salt to taste
oil-3tbsp

Method:
Heat oil in a pan and fry onion do not brown it

.Add tomatoes and fry till it leaves the oil.Add potatoes ,peas and coriander fry for 2-3 minutes


.Now add bread with salt and garam masala.If bread is dry use some milk Mix well for 1-2 minutes and switch off the stove.

Eat with green chutney or tomato sauce

The history of Lohri, a seasonal festival of North India is as old as that of story of Indus Valley civilization itself. The Festival of Lohri marks the beginning of the end of winter and the coming of spring and the new year
The Bonfire Customs & Tradition

In the evening, with the setting of the sun, huge bonfires are lit in the harvested fields and in the front yards of houses and people gather around the rising flames, circle around (parikrama) the bonfire and throw puffed rice, popcorn and other munchies into the fire, shouting "Aadar aye dilather jaye" (May honor come and poverty vanish!), and sing popular folk songs.


This is a sort of prayer to Agni, the fire god, to bless the land with abundance and prosperityLohri - the popular bonfire festival of North India is celebrated on 13th January every year. As the date of Lohri is decided according to the position of the sun its date remains fixed.


 Lohri marks the coldest day of winter. People of Punjab, Haryana, Himachal Pradesh and Delhi joyfully pass it by dancing around the sacred bonfires

. Lohri Festival gives some respite to the people as it marks the end of tough winter season.
Lohri celebrations are marked by traditional songs and dances.
People dress up nicely on the long-awaited bonfire festival. Lohri calls for family get-togethers and lavish dinners with sarson ka saag & makki ki roti. The day ends with prayers for a good harvest

SWEET&KHARA PONGAL

WISHING ALLTHE BLOGGERS HAPPY PONGAL
Though i am north Indian and we celebrate LOHORI but here i make sweet&khara pongal Itried it with the help of recipes saw on the blogs of my bloggers friend.Sweet pongal i saw on Kurunji's blog and khara pongal on internet.pL Try it or tell me how much i am successful in cooking

Ingredients
puffed rice-1cup
jaggery
1/2 cup
cashewnut-7
 raisins-10-15
 coconut powder-2tbsp
deshi ghee-2tsp
Method:
Wsh rice and setaside.Mixjaggery with water and leave it fo 5-6 minutes till melt.Heatone cup water in pan.Add rice and boil it for five minutes,if puffedrice are hard then pressurcook for 2 whistle.Add jaggery after sieve it.boil for 5minutes adding  ghee and coconut powder..In the last add fried cashnewnut and raisins.
Yummy sweet pongal is ready to eat
It is easy and quick to make recipe and taste is delicious.
RAWA KHARA PONGAL
Ingredients
Rawa-1cup
moongyellow dal-1/2-cup/
curry patta-6-8
mustard seeds-1/2 tsp
comminseeds-1/2 tsp
blackpepper (whole)-1/2 tsp
ginger -1sp grated
green chili-2
cshewnut-6-7 fried
oil3tbsp
salt to taste

Method
Fry Dal on medium heat for 23-4 minutes do not brown it.Pressure cook Fry rawa without oil and keep aside.
Heat oil in a pan add mustard seeds ,cummin seeds ns black pepper.Add currypatta an fry for 1-2 minutes add green chili and ginger fry again for 2 minutes Now add2 1/2 cup water and boil it.Add rawa and dal mix well and cover it stir in between and cook like upma.
Eat with coconut chutney.

NUTRITIOUS PRATHA

  
I used ragi and oats with wheat flour to make healthy pratha. ragi make the pratha very crispy and taste is different.For kids we will use this method to give them  nutritious and healthy food.
Ingredients:
wheat flour-1cup
ragi flour-1/2 cup
oats-1/4 cup
potatoes-3 boiled and mashed
thyme-1/4 tsp
green chili-1
coriander leaves
salt to taste
Oil for fry

Method:
Mix all the flours & oats knead it with sufficient water.Add thyme salt ,green chili and coriander leaves and mix well.Make ball and fill it with potato filling .Roll again and make ball.Take rolling board and roll it 1/2" thick.Heat griddle and roast the pratha with using oil on both sides.
Yummy pratha is ready.Eat with curd ,butter or chutney

GUAVA JELLY

When i was in Raebareli.there were many guava trees in our kitchen garden.Large no of guavas were grown on theses trees Few we  used for eating and left were used to make jelly in food preservation center.Isaw the  recipe ,its is so easy to make at home .only.after that i always made jelly at home. Today i had few guava which i purchased two days back and do  not feel like to eat it raw. So i thought  to make jelly which can be used in many ways Interesting thing s that my son eat it with rice and dal Try it.

Ingredients:
guava-4pieceor i/2 kg
sugar400gm
citric acid 1/2 tsp
water-cover the guava pieces
sterilized glass zar

Method;
Cut the guava i round thin pieces.Put the in a pan and add water which cover the all pieces of guava.Boil in slow fire for 15 minutes.check the skin of the piece easily come out.Now take a muslin cloth and pour whole the guava on it .Water will come out.Keep the water and discard the other wastage.

Put this guava water in a pan  .Add sugar to it. Boil till become thick and bubbles come out.to check the jelly is done take a spoon and take the syrup into it and down it if it is set by dropping then it is done.Add citric acid and boil for 1 minute.
Pour this syrup in a zar and keep for setting It takes time to set may be 4 to 6 hours.

Yummy jelly is ready.Eat with bread or pratha.
