Kidney Beans [Rajma] & Vermicelli and Rice pulav


I have lived almost 25 years in Rae-Bareli, a district in Uttar Pradesh, India. My friends always used to ask me Rajma preparation with less oil. I thought of  making this type and also posting it in "bookmark recipe: every tuesday event". In this recipe, i did not fry any ingrediants, so it takes less time for preparation. The taste of this type of Rajma recipe is different but nice. It has low caloires and gets digested easily. So i want to share it with my bloggers friend and i hope they will relish it.

Ingredients:

rajma[red kidney beans]-2cups
onion-2 small, chopped
ginger-garlic paste-1tbsp
tomato-1, chopped
turmeric powder-1/2 tsp
red chilly powder-1/2 tsp
garam masala-1/2 tsp
a pinch of hing
oil -1tbsp
Jeera [cumin seeds] -1/2 tsp
salt to taste

                                                              
Method:

Grind onion and tomato coarsly. Add 5 cups water and rajma in the pressure cook. Add ginger garlic  paste, onion-tomato paste and all the spices except garm masala. Pressure cook for 20 minutes on slow flame after one whistle. When it is done, heat 1 tbsp oil in a pan, add  hing and Jeera (cumin seeds) to it. When jeera crackles, add it to Rajma curry.

Garnish with coriander leaves before serving.
It is best combined with rice.


                                                                            
PULAV  [RICE AND VERMICELLI]

I saw this recipe foodbuzz blog. I made a little change in the recipe.

Ingredients:
rice-1 and a 1/2 cup, soaked for 1/2 hour
vermicelli-1/2 cup
onion-1chopped
garlic- 4-5 finely chopped
ginger-small piece finely chopped
jeera [cumin seeds]-1/2 tsp
Big elaichi-2-3
oil-2 tbsp

Method:
Roast vermicelli in a little oil and keep it aside. Heat oil in a pan and add all the whole spices in it, When crackles, add onion. When onion is transperate, add rice and water. When boiled, dim the flame and after 5 minutes add vermicelli and salt into it. Cover it till rice is done.
U can add vegetables to it but here i make a combo of rajma n rice

punjabi kadi with methi steamed pakora




Ingredients:
basen-1cup
sour butter milk-2cups
zeera-1/2 tsp
mustered seeds-1/2 tsp
coriander seds-1/2 tsp
fengureek seeds-1/4 tsp
hing-1/ tsp
red chili powder 1/4 tsp
turmeric powder-1/4tsp
salt to taste
oil-2tbs
FOR PAKORA:
basen-1 cup
methi leaves-1/2 cup finely chopped
baking soda-pinch of
oil-1tbsp
green chilly-1-2 chopped
salt to taste



Method:
Mix basen,red chili powder,turmeric powder and salt in buttermilk.whisk it so there is not any lump.
Heat oil in a pan and add all whole spices ,hing when cracked add buttermilk batter into it .
When boil slow the fire and boil it for 45or 50 minutes.
PAKORA;
Mix all the ingredients of pakora in basen.
Add little water and knead it hard dough like we make for gatta. make small balls.
After 30 minutes add basen balls into kadi.boil for 15 minutes or the balls fullydone.we can test the balls inserting any stick to it and it comes out plain..
Now the kadi is ready to eat garnish with coriander leaves
EAT WITH RICE OR CHAPATI

According to the American Journal of Clinical Nutrition, chewing the food for nine seconds will result in “significantly less food intake than quickly chewing for just three seconds.”

Are you familiar with the cliché, “Eat to lose weight?” If you are, then you should know that getting more hands on when it comes to the food preparation will make this expression more like “Cook to lose weight”. Having your meal prepared at home has a number of advantages. One is that you will have full control when it comes to your portions. You can also guarantee that the food you are about to eat is not overloaded with oil, butter, and other unhealthy fatty preservatives. It is good to eat out and grab some hamburgers once in a while, but nothing beats a warm home-cooked meal! Maybe it’s a good starting point when you want to keep watch over your diet to minimize eating outside and practice more on eating at home. Japani Samosa


it is called japani samosa bec it like japanis is very Small in size its size and shape is totally different .It is a appetizer or starter.
Ingredients
all purpose flour-2cups
oil or ghee-3tbsp
thyme-1/2 tsp
salt to taste
FOR FILLING
potatoes-4oiled and mashed
zeera-1/2 tsp
coriander powder-1/2 tsp
red chili powder 1/4 tsp
 garam masala-1/4 tsp
dry mango powder-1/4 tsp
cornflour-2tbsp
green chili-2
coriander leaves
salt to taste
oil for fry


Method
Take maida in a bowl. add thyme ,salt ,oiland rub with ur hand and mix well. now add water little by little and knead a  hard dough  .it is like smosa dough. keep aside for 30 minutes cover with wet cloth.
Heat oil in a pan and add zeera ,when crackled add all other ingrediends and fry for 3-4 minutes . be sure that all the things are mixed with potatoes .  add cornflour in potatoes mixture.cool it
Make balls and roll very thin roti on rolling board.now put alloo mixture in the middle of roti and roll it and make a roll.u can make as big roll as u like . here i make i make small roll bec i used in starter.
Now cut the roll in small pieces.it is ready to fry.

Heat oil in a pan fry samosas on law fire .
Eat with green chutney or sauce

ZARDA [ORANGE SWEET RICE]


In Punjab there was a tradition when any guest came he was served this zarda[rice]before meal.It showed that guest was treated nicely and honoured.MY mother cooked this rice very tasty and delicious. Who ate it praised her.Though i never learned from her but remembered how she was preparing. i share her recipe with all and remembered her who is not with us. reposting for event

Ingredients:
basmati rice-1cup
ghee-2tbsp
sugar1cup
orange colour-1/2 tsp
dry fruits-raisins,almond,cashunut.coconut
cardomeseedsbig and small-1tsp
crumbled khoya-2tsp
vark-1[optional]]

Method:
Soak rice for 1 hour.boil the rice in more water and colour. When it is 1/3 done separate the water and spread on clean cloth so that not stick to each other.Heat ghee in a pan and put seeds of cardom fry for 1-2 minutes /.Add sugar and 2tsp water boil it till sugar dissolve.Now add rice first it leave the water so put on high flame.When water evaporate cover it for 5 minutes on slow fire .Add dry fruits and again cover it for 2-3 minutes or till the cooked.After cooking  rice looks glossy.
