Baisakhi is also known as Vaisakhi or Vasakhi is a New Year festival celebrated in the Punjab region. Baisakhi is a Sikh religious festival and marks beginning of a new solar year, and new harvest season.

Choley bhature is a lip-smacking and spicy recipe that is prevalent in the northern parts of India. A combination of choley (chick peas) and bhature (fried breads that resemble poori), the dish is a typical Punjabi food, which is usually eaten as a breakfast or lunch, accompanied with lassi. The dish is served with onions and pickle. It has emerged as one of the popular street foods in northern India and a hit in the college campuses across the region. My recipe of both choley and bhature is little different without onion and garlic. u try this and taste is yum!!!!!
CHOLEY
Ingredients:
choley-250gm
chanadal-4tbsp boiled and mashed
choley masala-4tsp(homemade)
red chilly powder-1/2 tsp
green chilli-2
tomato-1 puree
ginger-1tsp
tamrid plup-1tbsp
comminseeds-1/2 tsp
tejpatta-2
salt to taste
coriander leaves
Method
Boil chana in pressure cooker for 1/2 an hour addind little amla powder. Keep aside.
heat oil in a pan add cumminseeds and tejpatta when splutter add green chilli and chana masala fry for one miute.Add tomato puree,ginger and fry till it leave the oil. Now mix mashed dal in it and fry so its aroma can be feeled.Add boiled choley salt and tamrid plup.Mix well add little water and cover it till all are mix well.
garnish with coriander leaves.
Tip for choley masala
take cummin seeds, coriander seeds, dalchini stick ,black pepper, caradomn,longand fry them till aroma of fry is coming .keepaside. when cool grind it and make fine powder and use .

vinegar-4tbsp
buttermilk-for kneding
oil-2tsp

Method
Take maida in a bowl and add oil salt and rawa.Mix baking soda in vinegar and immedietly mix in maida. kned it with buttermilk hard like puri dough. cover and leave for 1/2 an hour now it is ready to make bhatura.
make balls and roll them in smal and leave them for five minutes.Now roll it and make as thin as u like.fry in a oil and enjoy with choley.
