Pav BHAJI




Ingredients:--
potatoes-1/2 kg
gobhi carrot, beans-200gm
tomatoes-250gm [puree]
pav bhaji masala--3tsp
onion-2choped
ginger garlic paste-1tbsp
butter or oil--75gm
coriander leaves
garam masala-1/2 tsp

Boil 4 large potatoes, 1/2 cup peas & 1/2 cup chopped carrots. On a flat pan heat  75 gm  butter/ghee/oil and fry 2 chopped onions. Add 2 chopped tomatoes or puree, 3 tsp of Pav bhaji masala and salt to taste. Add mashed potatoes, boiled vegetables and stir. Add Garam masala for taste. Add little water and mix well.



Slit buns, apply butter on the inner side and roast.



Serve hot together Pav and Bhaji ,garnish with Corrainder leaves. U can enjoy this with Pudhina Chutney !!

KARUPATTI APPAM/PALM SUGAR APPAM& AWARD



This is another month of doing SNC challenge started by Divya of you too can cook.iI appreciate the idea of follow the each others recipes otherwise in northindian kitchen we cook only dosa,idli upma and utppamBy this challenge we came know the authentic and traditional dishes of south and vice versa.I am hats off to Divya.for the brilliant idea . This month challenge is given by Shama of  easy2cook recipes   In north we make mal-pua like this but using maida instead of rice.
I visited her blog many times. She has a wonderful space with different recipes and traditional dishes. You all must visit her blog. i am thankful to Shama    sharing this recipe.southindian get the challenge fromHatel khandivi 
HI friends i also want to share with you all the award THE QUEEN OF SNC which i received for the month of FEB as i posted my dish before the result declared..I feel proud that Divya selecting me for this honour


                                        

THIS MONTH WE FEEL PROUD THAT NORTHINDIAN GROUP WON
INGREDIENTS
boiled rice--1 cup
raw rice--1 cup
urd dal-handful
jaggery--250gm
fennel seeds--1tsp(OPTIONAL)
gheefor fry
Method
Soak the riceand dal  for 2 hours soak jaggery so it melt in the water




 Grind rice to smooth paste



make thick syrup when cool remove the impurities by stainer


Mix jaggery and rice. i used fennel seeds and mix in the batter.



Heat non stick kadai and apply little ghee now pure the 2tbsp batter and hold the handle of the kadai and spread it all over make thin dosa.Cover it and cook on slow fire  roast both the side .it will not take more than 4-5 minutes



Yummy karupatti appam/palm sugar appam is ready to eat

Corn Ice-cream





milk-1 1/2 cup
fresh cream-3/4 cup
 custard powder 1tbsp
sugar-3/4 cup
vanilla essence-1/4 tsp



Method
grind corn and make smooth paste.sieve it so that all the husk is separated.
heat milk in a pan.add corn paste in it and cook on slow fire .when milk is remain 1/3 add sugar and custard
powder .mix well so there is no lump.keep aside.cool it.
whip the fresh cream and mix in corn custard paste. pour it in freezer box and freeze it till done. chunk in between twice.by doing this ice-cream is soft.
Tip-egg yolk is used instead of custared powder




serve it with caramelized corn.
yummy taste. try it.i am also making it first time.

Shahi Cauliflower kofta





preparation time--25 minutes
cooking time--30 minutes
Ingredients
cauliflower  grated---i cup
corn flour-1tbsp
dry milk-1tsp
malai--2tsp
raisins---8-9 cut into small pieces
green chili-1 finely chopped
coriander leaves
coriander powder-1/2 tsp
gram masala--1/4 tsp
salt to taste
oil for fry
FOR GRAVY
onion-2 small
ginger garlic paste
tomatoes-2 pureed
coriander powder-1/2 tsp
red chili powder-1/2 tsp
gram masala
kasoori methi-
khoya-1tbs
pumpkin seeds &cashew nut paste--1 tbs
curd-1tsp
oil-2tbs
salt to taste
cream and coriander leaves for decoration
Method
KOFTA
grate cauliflower in thin side. i minute so microwave it for 1 minute
Add all the dry ingredients in it
add small pieces of  raisins and finely chopped green chili in malai
Add coriander leaves and mix it well
Make small ball  and flatten on palm fill the small portion of raisins mix and roll again of ur choice.Make all koftas
Heat  oil and fry the kofta.
Gravy
cut onion in big size
soak pumpkin seeds and cashew nuts in water for 1/2 an hour and grind to smooth paste.
heat oil in a pan and fry onion add ginger garlic paste and fry tili raw smell of garlic gone.
Now grind it and make smooth paste
use the left oil adding little more.
heat oil and add the onion paste
Add all the masalas except garam masala.
Now add khoya& curd and fry it.
Add tomato puree and fry till oil leaves side.
Add cashew nut paste.
Add 1 cup water to this
when boil add kasoori methi.
when serve the kofta boil the curry and add kofta in it.
garnish with cream and coriander .
Eat with nan or tandoori roti
