Jhatpat Easy Poha


Ingredients:
poha[puffed rice]-2cups
green peas-1/2 cup boiled
fresh corn-1/4 boiled
carrot-2 finely chopped
green chilly-1 crushed
coriander leaves
curry leaves-6-7
lemon juice-2 tbsp
jeera[cumin seeds]-1/2tsp
garam masala-1/4 tsp
oil-2 tbsp


Method:
Wash poha and strain water and keep aside.
Heat oil in a pan add cumin seeds. When it crackles, add curry leaves. Now add all the vegetables and green chilly and mix well.
Add poha, salt and garam masala. Sprinkle water and cover it for 5 minutes.
Add lemon juice in the end amd mix again.
Garnish with coriander leaves
Serve with green chunty or tomato sauce.
Can be eaten as it is.

Raddish Pratha


Ingredients:

Raddish-2grated
Wheat flour-3cups
Leaves of raddish-chopped finely
green chilly-2crushed
Thym (Ajwain)-1tsp
Garam masala-1tsp
Salt to taste
Oil for frying

Method:

Make a smooth dough of wheat flour. Squeeze out water from raddish. Mix all the ingredients to make the filling.



Make small balls of dough. Now roll one ball and keep it aside. Roll other ball on the rolling board and spread the mixture of raddish on it.


Cover this with other roti which we already rolled and fix the ends using soft hand.


Now roll it again a little and fry on tava[griddle] applying oil on both sides. Fry on slow fire to make it crispy.


Server with curd or butter or coriander chutney or pickle.

Instant Dhokla


Ingredients:

Besan: 1/2cup
Curd: 1cup
Suji[rawa]: 1/3cup
Turmeric powder: 1/2tsp Eno[fruit salt]--1Sachs



For Tempering:
Cooking Oil: 1 tablespoon
Curry leaves
Coriander leaves
Green chillies: 8 - 10
Mustered seeds: 1tsp
Salt to taste


Method

Mix besan and Suji in curd.
Add coriander leaves, turmeric powder, salt, some oil and make a smooth paste.
Now add add Eno. Once batter is ready, spread it it on idly stand and cook it for 10 minutes the same way as idlies are done.
When done, let it cool. Cut it into 2 halves.
Take oil in pan, add curry leaves and mustard seeds. When mustard seeds split, add green after slitting them into 2 pieces.
Add dhokla and stir.
Serve hot with green chutney and tomato sauce

Paneer Kachori





Ingredients:

MAIDA-100GM
CORN FLOUR - 1 TBSP
PANEER-100 gm, MASHED
GREEN CHILLY-1
MINT LEAVES-2TBSP
KASOORI METHI-2TBSP
CARROT -1, FINELY CHOPPED
GINGER- 1 TBSP
SALT TO TASTE
COOKING OIL FOR  FRYING

Method:

Take 1 tsp of oil and fry mint leaves ginger, green chillies for 5 minutes and grind them coarsly once it cools down.



Mix all the ingredients in flour with 2 tbsp oil and knead it as a hard dough.


Make small balls and roll on the rolling board.



Heat oil in the pan and fry paneer kachori.



It can be eaten as it is without any side dish. The best match is aloo ki sabji or any pickle.

Kachori, Aloo ki Sabji with curd dipped onion rings


Kachori is usually made with a filling for Urad dal mixture inside wheat balls but I tried this recipe by making a dough of urad dal mixture with wheat flour which makes it an easy preparation.
This will definitely be relished by kids and grown ups too.. :-)


Ingredients:

For kachori:

Wheat flour - 2cup
Urad dal -1/2 cup
Fennel seeds - 2tbsp
asafotieda (hing) - 1/4 tsp
Coriander seeds - 3tbsp
Green chillies-1
Coriander leaves

For aloo sabji (Potato Curry):

Potatoes - 1/2 kg
Tomato - 2 puree
Cumin seeds-1tsp
Kasuri methi-1tsp
Coriander leaves
Turmeric powder - 1/2 tsp
Red chilli powder-1/2 tsp
Coriander powder-1tsp
Salt to taste
Water - 3 cups

For Curd dipped onion rings:

Onions - 1 medium size
Curd - 1 cup
Salt to taste

Method for Kachori:

Soak urad dal for 4 hours. Grind it coarsly with green chillies. Roast fennel seeds, coriander seeds and powder it. Add dal , roasted and ground masala, coriander leaves and dal paste to wheat flour. Add salt, hing and make a tight dough. Keep it aside for half an hour. Make small balls.




Flatten balls using roller and oil.
Heat oil in a pan and deep fry it on slow fire to make kachori.







Method for Aloo Sabji (Potato Curry):

Peel and cut potato in small cube pieces.
Heat oil in a pressure cooker and add cumin seeds.When it crackles, add all the masalas. Add tomato puree and fry till it leaves oil. Add  cut potatoes add kasori methi to it. Add  water and cover the lid. Simmer flame after first whistle and cook for 10 minutes.
  

Method for Curd dipped onion rings:

Cut onions in round shape and make rings.
Hang curd in a muslin cloth for 1/2 an hour or till it leaves water completely.
Replace hung curd in a dish, add salt and onion rings and mix well.



Serve Kachori and Aloo subji hot with curd dipped onion rings and some pickles.

Idly Tamota Pasta


Ingredients:
Button idly
Tamato puree: 1 cup
Onion: 2 finely chopped
Capsicum: 1 (cut in vertical pieces)
Carrot-1 finely chopped
Green chillies: 2
Curry leaves: 9-10
Cooking oil: 2 tbsp
Salt to taste
Soya sauce:[optional]                                        

METHOD
Heat oil in a pan and add curry leaves and onion. Fry till it becomes transparent.
Add capsicum, green chillies, carrot and fry for 5 minutes. Add tamato puree and salt and cook till it leaves water. Add soya sauce (optional) and idly. Cook for another 5 minutes.

Serve hot with Coconut chutney,  Tomoto sauce or Coriander/Mint chutney.
It is good to have it for breakfast or evening supper.

Tip:
Button idly can be replaced with leftover idlies.

MACRONI IN DESI STYLE

Every body make macroni and the recipe is almost same with little difference.This recipe i got from my daughter .She makes with with few ingrdientsin desi style. Now i want to share with u all.
Ingredients:
Macroni-2cups boiled
shim la mirch-1 chopped in  thin length
potatoes-1/2 kgboiled
carrot-2 finely chopped
so ya sauce 2tsp
spring onion 125gm
green chilly-2 paste
garlic- 2tsp crushed
garam masala-1/2 tsp
salt to taste
Method:
Heat oil in a pan add garlic and Green chily.Then add onion  shimla mirch and carrot till it tender.Add potato and  macroni into it.Add masala and salt .In the end add soya sauce mix it thoroughly.
Garnished with coriader leaves.
