ZARDA [ORANGE SWEET RICE]


In Punjab there was a tradition when any guest came he was served this zarda[rice]before meal.It showed that guest was treated nicely and honoured.MY mother cooked this rice very tasty and delicious. Who ate it praised her.Though i never learned from her but remembered how she was preparing. i share her recipe with all and remembered her who is not with us. reposting for event

Ingredients:
basmati rice-1cup
ghee-2tbsp
sugar1cup
orange colour-1/2 tsp
dry fruits-raisins,almond,cashunut.coconut
cardomeseedsbig and small-1tsp
crumbled khoya-2tsp
vark-1[optional]]

This bunch of flowers made by my daughter-in-law's friend  RICHA  presented to me when she visit  to my house. she is very talented
Method:
Soak rice for 1 hour.boil the rice in more water and colour. When it is 1/3 done separate the water and spread on clean cloth so that not stick to each other.Heat ghee in a pan and put seeds of cardom fry for 1-2 minutes /.Add sugar and 2tsp water boil it till sugar dissolve.Now add rice first it leave the water so put on high flame.When water evaporate cover it for 5 minutes on slow fire .Add dry fruits and again cover it for 2-3 minutes or till the cooked.After cooking  rice looks glossy.


garnish with khoa and vark.rice is not looking orange due to my photography.
